The authors of the PPK website have a number of books out. One of my all time favorite is Vegan Cookies Invade Your Cookie Jar.
I'm the type of person that mostly checks out books from the library or borrows them from friends (I don't like spending money on something unless I know I will use it ALL the time). I got this one from the library and shortly after RAN to the store to pick up my own copy. LOVE IT. Soooooo many great cookie recipes. If you have a sweet tooth and can't eat eggs, this Vegan book is for you!
Just to let you know HOW much I love it: it stays out on my counter (with my recipe-scrapbook-book) instead of on the shelf with every other cook book.

There are sooo many other great cookie, biscotti, and cookie bar recipes in this book! There are many that don't have chocolate, if chocolate is not your thing. There are many with fruit and nuts or lemon zest if you prefer those kind. The authors include a helpful introduction on vegan baking and many pages of really fascinating facts and substitutions about each common ingredient. There is also "troubleshooting" tips. If you have a sweet tooth, check this book out!

- Cowboy Cookies pg 48 (the ultimate chocolate chip cookie in my mind)
- Magical Coconut Cookie Bars pg 121 (we can't get enough of these!)
- Deluxe Cocoa Brownies pg 132 (delicious brownies, make them as gooey as you like because there are no eggs!)
- Minonos pg 150 (like Milano cookies with shortbread on the outside and chocolate in the middle)
- Nutty Wedding Cookies pg 157 (International nutty shortbread cookies dusted in powdered sugar)
- Chocolate Chip Chai Spice Shortbread pg 193 (yum, dairy-free shortbread)
- Swedish Chocolate Balls pg 229 (as the authors describe, it is "a cross between an oat cookie and a chocolate truffle." It's wheat free too)
